Dinich Ena Karot/Potato and Carrot Mix

 

Potato and carrot mix is a common side wot that goes with the main wot types like Misir Wot, Shiro Wot, or Dinich Wot.

Ingredients

1 big yellow/red onion sliced in pieces
2 cloves of garlic
1 tsp turmeric
1/4 cup of cooking oil
3 roots of carrot or equivalent amount of baby carrots/ sliced
4 big potatoes/sliced
2 big green pepper/ more or less as desired

Recipe

  1. Slice one big yellow/red onion and pour it in a pan, cook it until it turns a little brownish, occasionally stirring.
  2. Add a 1/3 cup cooking oil and, stir occasionally
  3. Add the chopped garlic and cook the mix for 10 minutes occasionally stirring
  4. Add 1 tsp of turmeric
  5. Peal, rinse, and slice the carrot roots, and add it in the cooking mix, cook it for 5-10 minutes, occasionally stirring.
  6. Peal, rinse, and slice the potatoes, add it to the cooking mix
  7. Cook the mix 15-20 minutes, occasionally stirring, and pouring little water as needed till the mix is cooked well
  8. Add salt as desired
  9. Slice two green pepper, and add to the cooking mix, and remove the pot from heat

Cool it down for a bit and it is ready for serving. It is commonly served with Injera as a side together with other main wot types (misir, shiro or dinich). It can also be served with regular bread, pita bread, tortilla, or rice.
