Key Ser/Beets with Potato

Key Ser/Beets with Potato is a common vegan dish that is mostly served as a side with other main wot types like Misir, Shiro, or Dinich wot but it can also be served by itself.

Ingredients

1 large yellow/red onion sliced
1 clove of garlic
1/3 cup of cooking oil
3 beet roots
3 large potatoes
1 tsp of salt/more or less as desired
2 peppers/green or sweet

Recipe

  1.  Slice the beet roots in thin pieces and add it in a pan
  2. Add 1/3 cup of cooking oil in the pan and cover the top, cook it for 10-15 minutes occasionally stirring
  3. Slice the potato in same size pieces as the beets, and add it in the pan, mix it with the beets stirring slowly and cook it for 10-15 minutes with the top covered and. Stir occasionally, adding little water as needed to cook the mix
  4. Slice the onion and add it to the cooking mix, cook it for 5-7 minutes
  5. Add desired amount of salt
  6. Slice the green/sweet pepper and remove from heat

Cool the cooked mix for a bit and it is ready for serving. You can serve it with Injera (Ethiopian flat bread), or with any other type of bread. It can also be served with rice.
