Kitfo/Seasoned Raw or Mildly Cooked Ground Beef

Kitfo is one of the most praised foods in Ethiopia. It can be made mildly cooked or completely raw. It is mostly served with Minced and spiced green (collard or spinach), and spiced cottage cheese. This lesson includes recipes both for Kitfo and Spiced Green and Spiced Cottage Cheese.

Ingredients

Minced Red Beef
Nitir Kibeh (Spiced Butter)
Mitmita
Korerima/Ground Cardamom
Salt

Recipe

  1. Mince red beef and put it in a pan
  2. Mix the mitmita, korerima (ground cardamom), salt and melted Kibeh (Butter) in a separate bowl and add the mix into the minced red beef on a pan
  3. Stir the mix in very low temperature, preferably with your hand so the meat absorbs the spice
  4. keep mixing it under low heat to mildly cook it.

Taste it and add more mitmita, korerima, or salt as desired spiciness.

Spiced Minced Green

The recipe is all the same as making Kitfo, except the minced beef is replaced by green.

  1. Cut the leaf of collard green or spinach (remove the stem)
  2. Cook it in boiling water for a half hour
  3. Drain the water and mince the cooked green leaf
  4. Mix mitmita, Korerima (ground cardamom), salt, and melted Kibeh (Butter) in a separate bowl
  5. Mix the spices with the minced green leaf by stirring or using your hands so the green leaf absorbs the spices

Taste it and add more mitmita, korerima, or salt as desired spiciness. This will be served as a side with the Kitfo.

Spiced Cottage Cheese

This also uses the same recipe except the beef or the green leaf is replaced by Cottage Cheese.

  1. Boil butter milk under medium heat until it is crumbled and separted from the water.
  2. Drain the water and save the cottage cheese in a bowl, let it cool
  3. Mix mitmita, Korerima (ground cardamom), salt, and melted Kibeh (Butter) in a separate bowl
  4. Mix the spices with the cottage cheese by using a spoon or using your hands so the green leaf absorbs the spices

Taste it and add more mitmita, korerima, or salt as desired spiciness. This will be served as a side with the Kitfo, and the spiced minced green.
